Stephanie's Lasagna

I came up with the recipe about 2 or 3 years ago. My husband hates ricotta cheese and I wanted to make it saucy and a little chunky, just like I like my men!!! 


What You'll Need: Ground beef, Lasagna noodles, Mozzarella cheese, spinach, onion, garlic, salt, pepper, dried parsley flakes and 2 jars of spaghetti sauce. (not pictured Parmesan cheese and diced tomatoes)
Brown the beef, 
 add the diced onion,
and minced garlic, saute for 3 minutes.
Add a can of drained diced tomatoes.
Stir to combine and warm through.
Add both jars both spaghetti sauce.
Stir in the salt, pepper and parsley. Simmer on low for 10 to 15 minutes. 
Cook 12 lasagna noodles according to the box directions.
Spread 1 cup of the meat sauce on the bottom of a 13x9 baking dish.  
Layer with noodles,
then Mozzarella and Parmesan cheese. 
Layer with spinach...
top with half of the remaining meat sauce. 
Then do it all over again...noodles, 
cheese,
spinach.
Add the remaining meat sauce, after you've set aside 1 cup, for the top. Add another layer of noodles.
Top with that 1 cup of meat sauce,
and the rest of the cheese. Cover with foil and bake in a 350 degree oven for 20 minutes. Remove foil, and bake for an additional 10 minutes.
 Serve warm and enjoy!!!

Recipe
1 lb ground beef
1/2 onion, diced
1 garlic clove, minced
1 (14 oz) can diced tomatoes, drained
2 (24 oz) jars of your favorite spaghetti sauce
1 tsp salt
1/2 tsp pepper
1 Tbsp dried parsley flakes
12 lasagna noodles
2 cups Mozzarella cheese, shredded
3/4 cup Parmesan cheese, grated
2 heaping cups baby spinach



Instruction



In large skillet, cook the ground beef. Add the onion and garlic and saute for 3 minutes. Stir in the diced tomatoes, spaghetti sauce, salt, pepper and parsley. Let simmer for 10 to 15 minutes. 


While the sauce is simmering, cook the pasta according to the box directions. 


To assemble, spread 1 cup of the meat sauce on the bottom of a 13x9 baking dish. Arrange 4 noodles lengthwise on top of the meat sauce. Top with a third of the Mozzarella and Parmesan cheese. Layer with 1 heaping cup of baby spinach. Spread half of the remaining meat sauce on top of the spinach. 


Repeat layers, making sure to reserve 1 cup of the meat sauce for the top. Top with 1 more layer of the noodles, the remaining cup of meat sauce and the last of the cheese. 


Cover with foil and bake in a 350 degree oven for 20 minutes. Remove foil, and bake for an additional 10 minutes. Serve warm, sprinkle with more Parmesan cheese and red pepper flakes.
