Banana Bread Muffins

I just made these muffins for Dave who love, love, loves these and requests them all the time. They are so moist, not dry like most banana bread muffins are and have a great crunch on top.
What You'll Need:
flour, baking soda, salt, bananas, eggs, sugar and butter
Whisk together the flour, baking soda and salt.
In a large bowl, throw in the bananas and eggs.
Mash them together with a fork.
Mix in 1 cup of sugar and 4 Tbsp of melted butter.
Pour the banana mixture into the flour mixture and stir just until the batter comes together.
Scoop the mixture into prepared muffin pan (paper line or greased).
Spoon the remaining melted butter on top of the muffins.
Sprinkle with the remaining sugar.
Bake in a 350' oven for 15 to 17 minutes. Serve warm and enjoy.

Recipe
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
3 ripened bananas
2 eggs
6 Tbsp butter, melted
1 cups plus 2 Tbsp sugar

1. Preheat oven to 350 degrees F.
2. Prepare a 12 count muffin pan with paper-liners or grease with cooking spray.
3. In large bowl, whisk together the flour, baking soda and salt.
4. In a separate bowl mash together the bananas and eggs, then stir in 1 cup of sugar and 4 Tbsp of melted butter.
5. Pour the banana mixture into the flour mixture and stir until the batter just comes together.
6. Scoop the batter into the muffin pan and top, evenly, with the remaining butter and sugar.
7. Bake for 15 to 17 minutes.

  1. Can you substitute with Whole Wheat Flour? If so is there any difference in the amount?
