Friday Sweet Day: Snicker Doodles

I absolutely love Snicker Doodles...they are one of my childhood favorites and I always include them in the Christmas Cookie Cooking week-end!!! The key is to under cook them, just a little bit. 

What You'll Need: shortening, sugar, eggs, flour, baking soda, cream of tartar, salt and cinnamon. 
In large bowl, combine the shortening, 
sugar, 
and eggs. 
Mix with electric mixer on medium speed for 45 to 60 seconds. 
It should look like this.
In a separate bowl, whisk together the flour, salt, 
baking soda and cream of tartar. 
Add the flour mixture to the butter mixture. 
And mix until combined. 
On a small plate, whisk together the sugar and cinnamon. 
Shape the dough into 1 inch balls, 
and roll them in the sugar and cinnamon mixture. 
Place on a grease baking sheet and bake in a 350 degree oven for 8 minutes. 



Recipe
1 cup shortening
1 1/2 cups sugar
2 eggs
2 3/4 cups flour
1/2 tsp salt
1 tsp baking soda
2 tsp cream of tartar
1/4 cup of sugar and 2 tsp cinnamon mixed together for rolling


Instructions
Preheat oven to 350 degrees F. Line a baking sheet with foil and coat with cooking spray. 


In a large bowl or electric mixer cream together the shortening, sugar and eggs. In a separate bowl, whisk together the flour, salt, baking soda and cream of tartar. Add the flour mixture to the butter mixture and mix until everything is well combined.

Shape the dough into 1 inch balls and roll in the cinnamon and sugar mixture. Place the balls onto the baking sheet and bake for 8 minutes. Let cookies cool for 1 minutes before transferring them to a cooling rack to cool completely.
