Chile Colorado Burrito

I pinned this recipe on Pinterest and have been wanting to make it for a while. At first I was a little hesitant because it looked for good, but I was afraid my husband wouldn't like it or that the favor would be just bland. I knew I was taking a change making it, but it was totally worth it. It was so freakin GOOD!!!!!!
 
What You'll Need: 1 1/2 to 2 lbs Top Sirloin, Large Burrito Size Tortillas, 2 Cans Enchilada Sauce, Can of Refried Beans, (not pictured: Cheddar cheese) 
Pour one can of the enchilada sauce in the bottom of your crock pot. Place the meat on top of the sauce. 
Pour the other can of enchilada sauce over the meat. 
Cook in your crock pot, on low, for 8 hours.
Once the 8 hours is up, heat the refried bean in the microwave and spread 2 spoonfuls onto the center of the a tortilla.
Top with 1/2 cup of the beef.
 Mmmm...looks so good!!!
Fold up like a burrito and
smother it in the sauce from the crock pot. 
Top with Cheddar cheese and put it in the microwave to melt. 

I'm a Swiss cheese head, so I used that on mine. 
My plate afterward...so good!!!!!!!

Recipe
1 1/2 to 2 lbs top sirloin
2 (10 oz) cans of mild enchilada sauce
1 can of Refried beans
6 10inch burrito tortillas
Cheddar Cheese for topping

Instructions
In large crock pot, pour in one can of enchilada sauce. Place the top sirloin in the crock pot and cover with the other can of enchilada sauce. Let cook on low setting for 8 hours. 

Once the meat is done, break apart the meat in the crock pot. Heat the refried beans in the microwave and spread 2 spoonfuls onto the center of each tortilla. Top that with 1/2 cup of drained meat. Fold into a burrito and place in the center of a plate. Pour around 1/4 to 1/2 cup, depending of the size of your plate, of the sauce from the crock pot over the burrito. Top with Cheddar cheese and microwave until the cheese has melted.    

Serve warm and enjoy!!!
