Twice Baked Potatoes

Dave makes the best twice baked potatoes in the world!!! So when he told me he wanted steak and potatoes for dinner last night, I convinced him to make these. If you like potatoes you have to try these they are SOOOO YUMMY!!!!!!!!
What You'll Need:
3 baking potatoes
3 Tbsp butter
1/2 cup sour cream
1/2 cup bacon pieces
1/2 cup cheddar cheese, shredded
2-3 Tbsp red onion
2 Tbsp chives
1/2 tsp kosher salt
1/2 tsp white pepper
1/8 tsp black pepper
This recipe is very versatile, you can pretty much add anything you like to it. 
Start by baking your potatoes in a 500' oven for 45 to 50 minutes.
Finely diced the red onion and chives
In large electric mixer, throw in the sour cream, butter that has been cut into cubes, salt, black and white pepper. 
Throw in the bacon, cheese, onions and chives.
Have all this ready before the potatoes are done.
Right after the potatoes are done, cut the tops off and scoop out the insides of the potatoes into the bowl. They need to be, according to Dave, "Rocket Hot" so they melt the cheese and butter.  
Whisk it all together, until it's combined.
I could eat it just like this!!! And I was about to, but...
 He was giving me his stink eye. So I thought "I'll just wait until he's not looking".
 Fill the potato shells with the potato mixture.
Top with cheese and put in the oven for about 5 minutes or until the cheese melts.
