Chicken Tortilla Soup

So I haven't made soup in the longest time, unless you count chili as soup!  So when I found this recipe for Turkey Tortilla Soup online, I had to made it.  I changed up the recipe a little bit from the original.






Ingredients

  • 2 tbs olive oil
  • 1 ½ cup diced yellow onion
  • 1/4 cup green onions, finely chopped
  • 1/4 cilantro, finely chopped
  • 2 jalapeños or 1 large, seeds removed and finely diced
  • 4 garlic cloves, crushed
  • 1 tbs paprika
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper
  • 1 tsp sugar
  • 2 cans diced tomatoes
  • 2 cups chicken stock
  • 2 cups of tomato juice
  • 4 cups of shredded chicken
  • ½ cup lime juice – from 3 large limes
  • Salt and pepper to taste
  • Garnishes: grated monterrey jack cheese, tortilla chips, avocado, cilantro, green onions and lime slices

We got a rotisserie chicken from Costco which my husband pulled apart for me...thanks babe!

Instructions

1. Heat the oil in a large pot, add the onion, green onion, cayenne pepper, garlic, cilantro, jalapeños, paprika, oregano, salt, pepper and sugar.  Mix well and cook on mid-low heat for 10 minutes.  


2. Add the two cans of diced tomatoes and simmer for 10 minutes. 


3. Add the chicken stock, tomato juice and shredded chicken.  Mix well and let cook for 12 to 15 minutes. 


4.  Turn off heat and stir in lime juice.  


5. Serve garnished with monterrey jack cheese, tortilla chips, avocado, cilantro, green onions and lime slices.

 We had Italian bread and butter with it...yum dum diddy. 

Even Dave loved it and he doesn't like anything unless it's "Fried Stuff with Cheese!!!"
