Happy Valentines Day!!!

Look what my amazing husband got me for V day!!!


We had tomato soup with fresh basil and grilled cheese sandwich hearts for dinner.

Throw up, anyone?

So we started “sleep training” Sebastian when he was about 6 months old and he usually goes down without making a peeps (well not all the time).  Every once in a while he’ll cry for a little bit, but it will only last about 50 to 60 seconds before he’ll stop and fell asleep. 

Sunday he was just not himself.  He either wanted to be held or played with all day.  His nap, which usually last about 2 to 2 ½ hours, only lasted 1 hour…ugh.  So after dealing with a cranky baby all day when 8 o'clock rolled around it was definitely bed time. 

Dave put him to bed and he started cry as soon as he put him down.  After about 2 minutes of hearing him cry I decided to go in and check on him.  I hugged and kissed him until he was calm and then I left.  Well…you guessed it, he started crying before I even got out of the room! 

After about 90 second of crying and he had fallen asleep.  Once a half an hour had passed I went in to check on him and to put the blanket, he kicked off during his screaming fit, back on him. And that is when I discovered the dreaded throw up!!!  Now when I say throw up, I don’t mean he spit up a little bit, I mean throw up.`

It was everywhere…all over the carpet, the crib, the blankets, and the sheet and all over him.  I called for Dave and we started the clean up process.  We quickly yet quietly clean up the mess.  I took Sebastian out of this crib to change him into new PJ.  After realizing my hands were very cold I had switch cleaning duties with Dave and began scrubbing the carpet and cleaning off the crib.  We did all this without waking him up!!! Needless to say Sunday night was an adventure to say the least.

Chicken Tortilla Soup

So I haven't made soup in the longest time, unless you count chili as soup!  So when I found this recipe for Turkey Tortilla Soup online, I had to made it.  I changed up the recipe a little bit from the original.






Ingredients

  • 2 tbs olive oil
  • 1 ½ cup diced yellow onion
  • 1/4 cup green onions, finely chopped
  • 1/4 cilantro, finely chopped
  • 2 jalapeƱos or 1 large, seeds removed and finely diced
  • 4 garlic cloves, crushed
  • 1 tbs paprika
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper
  • 1 tsp sugar
  • 2 cans diced tomatoes
  • 2 cups chicken stock
  • 2 cups of tomato juice
  • 4 cups of shredded chicken
  • ½ cup lime juice – from 3 large limes
  • Salt and pepper to taste
  • Garnishes: grated monterrey jack cheese, tortilla chips, avocado, cilantro, green onions and lime slices

We got a rotisserie chicken from Costco which my husband pulled apart for me...thanks babe!

Instructions

1. Heat the oil in a large pot, add the onion, green onion, cayenne pepper, garlic, cilantro, jalapeƱos, paprika, oregano, salt, pepper and sugar.  Mix well and cook on mid-low heat for 10 minutes.  


2. Add the two cans of diced tomatoes and simmer for 10 minutes. 


3. Add the chicken stock, tomato juice and shredded chicken.  Mix well and let cook for 12 to 15 minutes. 


4.  Turn off heat and stir in lime juice.  


5. Serve garnished with monterrey jack cheese, tortilla chips, avocado, cilantro, green onions and lime slices.

 We had Italian bread and butter with it...yum dum diddy. 

Even Dave loved it and he doesn't like anything unless it's "Fried Stuff with Cheese!!!"

Processed Food

So my sister and I are always on the look out for any new, up and coming diets and have been on a non process food kick lately.  So when she told me I had to check out this video a friend of hers posted on FB, from the Huffington Post, about processed food I had to watch it. 


It was a video on two people.  The first person ate Top Ramen noodles, Gatorade and gummy bears.  The second ate homemade ramen noodle, Hibiscus Gatorade Tea and homemade juice gummy bears. They both swallowed these little tiny capsule cameras to follow the food thought their stomach and intestinal tracks.

The footage shows how the bodies digest the no processed, homemade food much easier and faster then the processed food.  Did you know that Gatorade put a chemical in their drink to make it blue and because it is a trade secret the USDA doesn’t require they to release the chemical compound to the public?!?!

About a year or so ago we watch this movie call “Food, Inc”, if you haven’t seen it I highly suggest you do.  Warning: You will never look at food the same way again!!!

Aprons!!!

Aprons…my new found obsession!!!  I’m not sure when it started but for the last few months, every time I have a couple extra minutes to myself I find that I’m online searching for cute and classic aprons.  I’m don’t quite know where this obsession came from it’s either because of my love for the 50’s (my absolute favorite era). Were the men went off to work and the women stay home to cook, clean and take care of the kids, it was just a simpler time back then. Also, I must say the fashion in the 50’s is just so classic and will never go out of style (in my opinion as least). That combined with the fact that come April I’ll find myself to be a stay at home mom to our 1 year old little boy.    

I recently bought my first apron for target (above) and although it is very cute I can’t help but think about getting another I have my eye one.  It’s a little more pricier that this one, it’s a must have.  Here's the link for this apron
