Raisin Scones


What you'll need: Flour, sugar, baking powder, baking soda, salt, butter, raisins, sour cream and an egg
Combine 2 cups of AP flour, 1/3 cup of sugar, 1 tsp baking powder, 1/4 tsp baking soda in a bowl.
Whisk to combine.

In a separate bowl whisk together 1 egg and 1/2 cup of sour cream.
Grate 8 Tbsp (1 stick) of frozen butter. 
Add the frozen grated butter to the flour mixture. 
You'll have to work fast at this point, you don't want the butter to get soft. Toss to combine the butter and flour. Then add 1/2 cup of raisins and toss to combine them. Add the egg and sour cream mixture and stir in with a fork until just combined. 
Here the part where your hands get involved. Knead the dough until it just comes together. It's okay if it's still crumbly. 
Pat out onto a floured surface into a 3/4 to 1 inch thick circle. 
Cut into 8 equal pieces. 
Place the scones at least 1 inch apart on a foil or parchment lined baking sheet. At this point you can sprinkle the tops with a little bit of sugar to add a little crunch if you want. Bake them in a 400 degree oven for 13 to 15 minutes. 
After the scones are baked, immediately transfer them to a cooling rack. You can eat them hot out of the oven or at room temperate, either way they are delicious. 

Recipe

Ingredients
2 cups AP flour
1/3 cup sugar
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup sour cream
1 large egg
8 Tbsp unsalted butter, frozen
1/2 cup raisins

Instructions
Preheat oven to 400 degrees. 

In a large bowl whisk together the flour, sugar, baking powder, baking soda and salt. In a separate small bowl beat together the sour cream and egg. Grate the frozen butter and toss it with the flour mixture. Add the raisins to the flour mixture and toss them together. 

Using a fork stir the egg mixture into the flour mixture until it is well combined. The dough will look very dry. Knead the dough with you hand in the bowl until it comes together. 

Turn the dough out onto a floured surface and work with your hands to make a round 3/4 to 1 inch circle. Cut into 8 equal pieces and place them on a baking sheet lined with foil or parchment paper. 

Sprinkle with sugar if desired and bake for 13 to 15 minutes. Let cool on a cooling rack.

January 2013

Wow...January went by fast. It's been a pretty uneventful month for us. We've been passing around a cold/flu/virus thing and haven't been doing a lot of anything but lying around. But we did manage to sneak a few fun things in. 

We played in the snow
Sebastian ate the snow
Sebastian played with all the new toys he got from Christmas.
We had a couple of nice weather days and we're able to enjoy them.
I made Five Guys Burgers
I posted a blog about the many faces of this guy.
